TAPIOCA BLUEBERRY PUDDING
Cook time: 20 minutes
Prep time: at least 120 min for soaking the tapioca
Ingredients:
- 1/4 cup tapioca beads (35 g)
- 2 Tbsp honey
- 1 cup of almond (or any other) milk (250 g)
- 1 tsp vanilla extract
- 1 tsp blueberry powder by Bobica hr
- 3 Tbsp oatmeal
Preparation:
Pour water over the tapioca beads and let them soften for about two hours. You can also soak them in the evening so you have tapioca ready in the morning.
Add honey, vanilla and blueberry powder to the milk. Then add the drained tapioca beads and heat to a simmer with gentle stirring. Reduce heat and cook while stirring until thickened and until the beads become translucent.
Slightly cool and pour into serving bowls over the oatmeal and allow to cool.
You can decorate with fruit as desired, nuts, whipped cream, ice cream, chocolate or caramel.
