HEALTHY ARONIA COOKIES

Ingredients (20 cookies):

  • 1 cup oatmeal (3dcl)
  • ¾ cup wholewheat flour
  • 1 egg
  • ½ cup almonds
  • ½ cup cranberries
  • 2 Tbsp honey
  • 1 tsp cinnamon
  • 1 ½ tsp baking powder
  • 1 Tbsp vanilla extract
  • 1/3 cup olive oil
  • A spoonful of Aronia powder by Bobica.hr

Preparation:

Preheat oven to 350°F (180°C). Line a large baking pan with parchment paper and set aside. In a bowl, mix all ingredients until a homogenous mixture is obtained and refrigerate for 30 minutes. Shape cookies into balls with your hands and bake for 15 minutes.

You will make about 20 cookies, depending on the size you choose. The cookies are great, and 3 days after baking simply store in a glass jar with a lid.
