Elderberry Energy Balls

10 minutes + cooling

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter)
  • 1 tablespoon Bobica elderberry powder
  • 2 tablespoons honey or maple syrup
  • 1/4 cup mini chocolate chips or dried fruit (optional)
  • 1/4 cup ground flaxseed or chia seeds

 

Preparation:

  • In a large mixing bowl, combine oats, almond butter, elderberry powder, honey, and flaxseed.
  • Stir until all ingredients are well combined; fold in chocolate chips or dried fruit if desired.
  • Shape the mixture into small balls, about 1 inch (2.5 cm) in diameter.
  • Place them in the refrigerator for at least 30 minutes to set.
